  • Kids' Protein Banana Muffins

    These muffins are super fast, easy to make, and made with simple ingredients which is everything you need in a recipe when you have constantly hungry kids like I do. Plus, the bonus is that kids can help you make them: have them mash the bananas and help you stir everything together. These are fluffy and packed with protein yet have a fantastic melt-in-your-mouth texture. To keep them gluten-free, use gluten-free oats in the recipe and to keep them vegan, use a flax or chia egg by mixing 1 TBSP flax or chia meal with 3 TBSP warm water and setting it aside to "gel" before using it in the recipe! Protein Banana Muffins Yields 8-10 Ingredients: 2-1/2 bananas (about 1 cup), mashed 1 flax "egg" (for vegan option) or 1 egg 1/4 cup pure maple syrup 3 TBSP coconut oil, melted 1 tsp pure vanilla extract 3/4 cup oats, ground to a flour consistency or oat flour 1/2 cup vegan protein powder* 1-1/4 tsp cinnamon 1 tsp baking soda 1 tsp baking powder sprinkle of sea salt optional: 1/4 to 1/3 up nondairy chocolate chips Directions: 1. Preheat oven to 350 and line a muffin trap with liners. Spritz liners with nonstick spray or omit liners all together and oil the pan. 2. Mash the bananas until pretty smooth and add in the other wet ingredients. 3. Fold in the dry ingredients and the chocolate chips in last. 4. Fill muffin cups almost to the top and back 18 minutes or until an inserted toothpick comes out clean. *I used this protein powder for the best consistency and flavor. I made it with plain hemp protein powder too but it wasn't as good!

Be sure to use coconut yogurt or a similarly-textured nondairy yogurt for the best version. 4. Chocolate Mint Pancakes. Talk about a healthy dessert: this chocolate mint pancake is perfection. Add in the choc-mint vegan protein bar for a super protein-packed yummy treat. A bunch of sneaky spinach lends the vibrant green hue, and packs in extra nutrients. 5. Grain-Free Berry Pancakes.     At my age (recently 35!), I'm extra cautious of sun exposure and ingredients I put on my skin. I'm obsessed with keeping fine lines and wrinkles at bay, so in addition to being sure I'm always properly hydrated, I rely on a rotation of plant-based skincare and beauty picks to keep my skin looking (and feeling) young. Here's a few of my favorites plus a few new ones that I keep hearing great things about! 1.TruSkin Day-Night Anti-Aging Duo is my newest obsession. I could see visible brightness in my skin and a more even texture after just a few uses which I LOVE because I am so sick of products that take months to "start working" or that makes your skin breakout ("detox") before it is supposed to work. Um no thanks. The ingredients are awesome and the Vitamin C works miracles. If you like the sound of that, check out their Rosewater Toner Spray or the B3 Serum with aloe and avocado oil. 2. People's Beauty has nothing but 5 star reviews. This cleanser + makeup remover duo packs in plant-based amino acids and macadamia oil, mandarin oil and chia seed oil. Reviews range from it "clears breakouts" to "leaves skin soft and refreshed." 3. HAN natural makeup. HAN eyeshadows are my favorite shimmery colors. I love all gold/champagne/bronze hues of eyeshadow, and these (and their ingredients) do not disappoint! Almost all the ingredients are plants. In order, the ingredients include rice, argan, acai, shea, pomegranate, blueberry, green and black tea and so on. I love the ingredients, shades and price, and promise you will adore these too. 4. Bathe in the luxury of flowers and crystals. Whether or not you believe in the healing power of crystals, epsom salt baths with flowers and amethysts will wow you. (As in, you will feel relaxed like you never have before). The ionic salts are supposed to detox you and draw out impurities. At any rate, you and your skin will feel amazing! 5. I've been a longtime fan of Andalou Naturals, and this Deep Wrinkle Dermal Filler cream with aloe vera is wonderful. Goji berry and aloe feature heavily in this lightweight formula as well as hibiscus, roobios, vitamin C and white tea. I've noticed it has the most impact on smile lines around the mouth, and this has been repeated by many other customers on Amazon in the review section. 6. Plant-Based lipstick? Sign me up! Ecco Bella Plant-Based Lipstick is made from vegetable waxes and oils and boasts a smooth application and actually moisturizes like a balm but looks like a lipstick. Ingredients include coconut, jojoba, vitamin E and chamomile. 7. One of my top picks is Bamboo Pillowcases as part of a beauty regimen. Bamboo pillowcases are AMAZING for a skin-friendly and breathable option. Unfortunately they can get very pricey just for one pillowcase, but this pick from Amazon works just as good as the luxury brands. It's also cooling and lets you have a more restful sleep, which we all know looks better than a night of tossing and turning. I swear my skin looks better after a night of bamboo bedding versus cotton but who knows! 8. Lastly, dried flowers and herbs to DIY! This is the most versatile option. I always have organic dried rosebuds in my cabinets. From tossing in the bath to adding to homemade soaps, candles and more, you can do endless things with these lovely flowers and plants.     By now you may have heard of Ashwaganda. But what is it? Ashwaganda is an ancient Indian herb used for numerous medicinal purposes for thousands of years, and lately it has become more mainstream as more and more companies are capitalizing on this superherb. (If "superfruit" can become a word, then I'm pushing "superherb", thankyouverymuch). Maybe you have even sampled ashwaganda tea or coffee. (That was a big no thank you from me--I think it tastes like the earth mixed with water). People swear by the benefits of ashwaganda, though, so I delved into it and this is what I found. Ashwaganda is found to: Reduce stress and tension Promote memory and concentration Support endurance, strength and muscle size Improve sleep quality Support sexual function Help achieve and maintain a healthy body weight If the thought of an earthy burp sounds horrifying to you, check out ashwanda gummies These are made by the Goli brand of Apple Cider Vinegar gummies that I swear by for energy and a healthy digestive system. These vegan plant-based gummies are the best tasting way I have found (and I have tried many!) to reap the benefits of ashwaganda without the, shall we say, interesting taste. Another option is using Ashwaganda Powder in cooking and baked goods. This organic powdered ashwaganda is a great option, as in small amounts it blends seamlessly into any of my plant-based recipes! Whichever way you absorb it, ashwaganda can have great benefits for you. I personally take 1 or 2 Ashwaganda gummies in the evening, and I already feel that it has helped my sleep tremendously and I do feel more focused in my waking hours. If you're more of a pill person, feel free to try an Ashwaganda supplement. I, however, feel that I get more out of eating the ingredients I am most trying to absorb.     Golden lattes are non-caffeinated "golden" beverages made with turmeric and plant-based milk. They are nourishing and great for you, so it made perfect sense for me to combine both a golden latte and a waffle: and the result was perfection. The twins were so excited to eat their "golden waffles" and let's be honest, I was too. They taste divine: the texture is fluffy yet crispy yet still melt-in-your-mouth while remaining.grain-free, paleo and vegan AND autoimmune-disease-friendly. Basically, pin this recipe, or bookmark it, stat. It's your new go-to waffle recipe, and yes, you're very welcome. Golden Latte Waffles Yields 11 medium waffles Ingredients: 2 cups super-fine almond flour* 1 cup arrowroot powder** 1 TBSP + 1 tsp baking powder (without corn or aluminum, please!) 1-1/2 tsp turmeric powder 2 flax eggs*** (or 2 organic free-range eggs if you're not vegan) 1 cup unsweetened almond milk 2 tsp apple cider vinegar 3 TBSP mashed banana 3/4 tsp pure vanilla extract 1/2 cup avocado oil, scant Directions: 1. Mix dry ingredients together with a fork to "sift" and set aside. 2. Mix flax eggs first if using (see directions below), then mix all wet ingredients together. I suggest using avocado oil so that it will not clump as it cools, but if you opt to use melted coconut oil, whisk it in very quickly so that no hard lumps form. 3. Fold in dry ingredients and let batter sit as you heat your waffle iron. Use avocado oil spray (one of the safest oils for high heat) and cook as usual. I love them plain, or top with unsweetened applesauce or fruit of choice! Recipe Tips: * Super-fine almond flour lends the perfect fluffy texture: almond meal will be too heavy and grainy. ** Stock up on arrowroot or tapioca flours/starches. When baking egg-free and/or grain-free, either one is great for texture and binding. This one goes a long ways, and is much more affordable than you'll find in health food stores. ***If using flax eggs, mix 2 TBSP ground flax seeds with 6 TBSP warm water and set aside to gel and thicken before mixing the wet ingredients together.
